Thanks to the super cool team @buzzstopnz for all your beekeeping advice and spinning our honey yesterday🍯 Funnily enough we’re currently scoffing honey butter popcorn while watching Bee Movie🐝 If you’re doing movie night tonight, make some honey buttered popcorn! Super easy.... Just heat a tablespoon of coconut oil (or other neutral oil ) in a heavy-bottomed pot on medium heat. Add a few tablespoons of popping corn and cover with a lid. In a few minutes you’ll start to hear popping. Shake the pot a few times during popping. Once popping noises have slowed down turn off the heat and leave a couple more minutes. Uncover and stir in a good knob of butter and a super-good drizzle of honey. Stir until butter and honey are melted and popcorn is all coated!! 😋😋😋

Hi guys! I’ve been blown away with your feedback, love, support, and how freakin’ awesome you’ve been whipping up all this delicious food whilst in lockdown on the back of the Nadia’s Comfort Kitchen TV series. It really felt to me like we were all in one gigantic ‘cooking bubble’ together🥰 Lots of you have said you’d love to buy a cookbook with the recipes...but I really wanted them to be accessible to EVERYONE as I’ve just been so impressed with how so many people from so many different backgrounds and ages (including those who’ve hardly cooked before ) have found a new love and joy for cooking. It’s magical to me🙌 And I want to encourage you ALL to keep cooking, keep sharing delicious food with your friends and whanau, keep being resourceful with what you’ve got and less wasteful....way past lockdown!! So I was meant to be in Paris at the Gourmand World Cookbook Awards later this month, but obviously that’s not happening😕Anyway...turns out that Vegful came runner up for ‘Best Vegetarian/Vegan Cookbook’ IN THE WORLD!!!🙌🙌🙌 Yahoooo!!! So I’d like to say a big thanks to all of you, and all the delicious veggies you’re eating lots of! It’s awesome that we are all eating more and more veg-based meals! What’s also great is I got to wear my gumboots to the ‘awards ceremony’ 😉 Huge thanks (and high five! ) also to photographers @vanessalewis @michaeljohnlewis66 and @mattqueree for all the beautiful pics in the book and @seachange .studio for the rad design 👌😘

The last episode of Nadia’s Comfort Kitchen is on today (😕 ), but today is also the last day of lockdown (😄 )...if you’ve been watching and wondering what it was like to film a TV series during lockdown in our bubble, here are a few facts you might not have known... 1. The whole series was filmed on my phone! I then had to upload the data (via very slow internet which took ages ) to an editing team based in Auckland 2. Our whole film ‘crew’ was just my hubby Carlos (cameraman ) and I (director, hair and make up artist, talent - hence the many bad hair days! ) 3. The main reason at least one of the kids was in the kitchen with me was because they had to be separated or else they would just fight and then we couldn’t film. We also went through about 5kg of frozen peas (and probably a kilo of chocolate😳 ) to help keep them quiet! 4. More often than not we had to do multiple takes because there would be ear piercing screams, banging, shouting or fighting from the kids (increeeeedibly frustrating😫 ) 5. It took us 15 days to film the whole series. By the end of it I had almost run out of undies because I hadn’t had time to do any washing for so long! (Don’t worry, I got straight into doing the washing! ) There you go! 🤪 Catch you guys at 4.30pm today on TV1

Look at this....precious newspaper clippings on the walls of our old wool shed from 1915 - men and women who sacrificed and risked so much. Whenever I look at these photos I can’t help but cry a little thinking of who they were dear family and friends to. Have a good ANZAC day everyone, I hope you get at least a little time out today to take a deep breath and remember what really matters. Lest we forget❤️

Mission for keeping kids occupied today = baking ANZAC biccies🍪👍 Here is the recipe we use (makes 20-22 biccies )... 1/4 cup golden syrup 125g butter (or coconut oil ) 1/3 cup brown sugar 1 level teaspoon baking soda 3 tablespoons hot water 2 cups rolled oats 1 cup desiccated coconut 1/2 cup wholemeal or plain flour (or other flour like spelt, or gluten-free etc ) Pinch of salt 1/3 cup sultanas or raisins (optional ) 1. Preheat oven to 180degC and line a large baking/oven tray with baking paper (or two smaller trays and bake biccies in two batches ). 2. Melt golden syrup, butter and sugar together in a medium pot on medium heat. 3. Mix baking soda with hot water to dissolve. Add to golden syrup mixture, along with all other ingredients. Stir together until well combined. If the mixture appears to wet, add a tiny bit more flour. Leave until cool enough to handle and firm enough to roll into balls (you can speed this up by placing in the fridge for 5 minutes ). 3. Roll tablespoonfuls of mixture into balls and place on lined tray at least 3cm apart (to allow them to spread during baking ). Flatten slightly with the back of a fork. Bake for 15-18 min until golden. 4. Leave on the tray for a few minutes then transfer to a wire rack to cool completely before storing/eating. They’ll crisp up as they cool. Enjoy with a cuppa or glass of milk! 😋

Just finished filming another Ep of Nadia’s comfort kitchen with my little helper🥰 Anyone inspired to go on a lockdown ‘date night’ after watching today’s episode?😆 I can honestly say that we had a lot of fun and, since then, we’ve been doing a lockdown date night every few nights (not kidding! ). Starting today at 4.30pm on @tvnz .official channel 1 and @tvnz .ondemand is....Nadia’s Comfort Kitchen!!! we filmed all of this in lockdown, just Carlos and I (and our little monkeys of course🙈 ). 10 episodes, on every weekday. All simple, easy, flexible recipes that make use of what you have in your pantry, fridge and freezer (with lots of substitutions so you don’t have to go out to get specific ingredients! ).
