A Sweet Potato and Coconut Curry made using sweet potato, coconut chips, coconut milk, kale, ginger, garlic and chili. In this recipe I have used the @SunRice Naturally Rice & Quinoa. I like using this blend because quinoa adds a boost of protein and the brown rice is rich in fibre. This curry is hearty, creamy, smooth and bursting with flavour! Click on the link for the recipe. One of my favourite things about summer is having friends over for dinner and enjoying a delicious snack platter on their arrival. Platters don’t have to be unhealthy or boring, in fact, they’re a great way to load up on fruit, vegetables and wholegrains - an easy way to experience different flavours too. This platter was created using @sunrice Brown Rice Chips, which are made with wholegrain brown rice, no preservatives, artificial flavours, colour, wheat or gluten. My favourite is the Parmesan & Sundried Tomato! Lx

Did you know the NZ government plans to plant 1 billion trees over the next 10 years?! I think that is incredible ❤️We are getting on board by planting this peach tree today in our back yard. Peaches along with plums, nectarines and cherries are now in season so enjoy as much of these delicious fruits before the season ends. Add them to salads, dessert, on top of oats, or have as a daily snack 🍑🍒🍑🍒

COCONUT ICE // With the silly season just around the corner, I thought it would be appropriate to share a recipe that is delicious, easy to make, and can be taken to upcoming summer BBQ's. I wanted to make a more nourishing version of the classic coconut ice recipe by replacing the refined sugar with coconut sugar and red food colouring with beetroot juice. The beetroot juice gives the slice a beautiful, vibrant pink colour. This is a chewy treat that is quick to make and super moreish. One thing I look forward to in Summer are the recipes you can create with the seasonal fruit and vege, and this asparagus, strawberry and rocket salad uses some of my favourites. The combination of sweet and juicy strawberries with crunchy asparagus accompanied by goats cheese and spicy rocket is absolutely delicious.
