Thanks to the corona virus 🦠, the world 🌎 has finally come to realize: 1. That HEALTH & WELLNESS is second to none. 🏃🏃🏼‍♀️ 2. That the DIGITAL WORKPLACE and WORK FROM HOME is no longer the future but is the present and future. 👨🏻‍💻 3. That we may actually be doing so many things the wrong way e.g. personal hygiene 4. What is most important right now? What should you be focusing on? How are you choosing to spend your energy, mentally and physically? These are questions that have been rolling around in my head the past few days. I hit a breaking point at work and had to both set some boundaries and ask for help, which are two things that are very hard for me. I am only one person. And that’s okay. We cannot live our lives focusing on the wrong things, putting too much energy into one thing or another, giving more importance to work over mental wellbeing, relationships, and rest. When working from home, it’s so easy for things to become unbalanced. We work for two, three, four hours past what we normally do in the office. We check emails late at night. Answer calls on the weekend. For me, this becomes consuming. And that’s not healthy. So what’s really important to you? Really? It’s my friends, my family, my loved ones. It’s cooking with my sister and doing yoga online. It’s spending time outside. Decide for yourself. And stick tight to it. 🌤

HEALTHY HAMBURGER HELPER This pasta dish is the ultimate comfort food, perfect for times like this. It tastes even better than the boxed version we all grew up on and is made with simple, healthy ingredients. Here’s how to do it — 1 lb grass fed ground beef 2 tsp arrowroot flour (or you can use cornstarch ) 2 tsp onion powder 2 tsp garlic powder 2 tsp paprika 3/4 tsp salt 2 cups unsweetened almond milk (or regular milk ) 1 cup reduced sodium chicken or beef broth 1 cup canned tomato sauce 4 oz rigatoni (sub GF pasta to make GF ) 1/2 cup shredded cheddar cheese (can leave out to make DF ) Add the milk, broth and tomato sauce to a small sauce pan and heat on low until hot. In the meantime, cook the ground beef in a large, deep skillet until browned, about 5-6 minutes. Drain off the extra fat. Sprinkle the arrowroot flour, spices and salt over the beef and then pour in the milk, broth and tomato sauce. Bring to a boil. Once boiling, add in your pasta and continue to boil for 1 minute while stirring frequently. Then reduce heat, cover pan and simmer for 10 minutes. Make sure to stir every few minutes. After 10 minutes, remove lid and continue to cook until thickened and reduced, about 5 minutes. Stir in cheese and ENJOY! #nourishedbynicole #nbneats

Not everyday will be perfect!⁣ ⁣ My normal routine has pivoted a bit in the past few weeks! I am not following my normal schedule and I have been under my macros for the past few days ~~ it’s OKAY⁣ ⁣ Whether you are over or under your macros everyday will not be perfect ! Now is the time to take advantage of the free time get your workouts in and also relax!⁣ ⁣ I have been going on a lot of runs and doing a little less strength training than normal but doing what works for me at the moment. Tofu scramble 😍 one of my go-to lunches right now 🙌🏼 To make it follow the recipe below: In a bowl mix together ✨ 1/3 cup of milk ✨ 1 tsp of each of turmeric and cumin powder ✨ 1/2 tsp of cayenne pepper ✨ A few cracks of black pepper ✨ a sprinkle of chilli flakes ✨ 1 heaped teaspoon of mustard ✨ 1 heaped teaspoon of vegan hemp Parmesan @pimp .my.salad (or vegan cheese of choice ) Once mixed - add your tofu! I use about 1/2 packet of firm tofu and to achieve the “scrambled” look, I pull it apart with a fork 🍴 Whilst the tofu is marinating in the mixture, chop up your veggies of choice and start cooking them on a pan. For this one I used: Mushrooms Red capsicum And Kale and Spinach at the very end Poue your tofu mixture onto the pan and cook until lightly golden. I served it with sourdough toast topped with avocado, chilli flakes and more hemp Parmesan
