happy saturday! the weather has been a little warmer lately, but I am patiently awaiting the fall colors and cool temperatures to come back! this sweet p + quinoa chill is perfect plant-based, warming dinner on a chilly fall night. 💥Thayir Sadam or how we call it at home - Curd Rice 💥 Such a simple dish but so so flavourful. I make a very simple free version because wo don’t like adding any carrots or other grated veggies to this beautiful meal. The best part about this dish is you can skip any ingredient you like depending on your preference and availability and it will still be a wholesome meal. Here is my version of this simple dish Ingredients: - 1.5 cups short grained rice cooked and cooled to room temperature - 2.5 cups curd - Curry leaves (tons ) - Mustard Seeds 2tsp - Jeera 1tsp - Urad Dal 1 tsp - Freshly grated ginger - 1 inch - Heeng - a pinch - 2 Broken Drierd chilli - 1 chopped green chilli - Salt to taste - Black Pepper to taste - Coriander and pomogranate seeds - Ghee Method - Mix the cooled rice with the curd well and add salt and pepper. - In another small pan, take some ghee, add mustard seeds, when they pop, add jeera and wait for it to crackle. Add the urad dal and wait for it to change colour. - Add heeng, followed by curry leaves. 2x banana weetabix for breakfast was well yum and ticked a HEA and my HEB. For lunch I had 2 toasted slices of warburtons country white (7syns ) topped with Leerdammer Light (2nd HEA ) and Quorn ham style slices topped with cherry tomatoes and a sprinkling of salt. Ya sabéis que soy muy fan de la comida mexicana y del país en general 😝. Acordándome de los puestos callejeros de Ciudad de México me acordé de los deliciosos Tlacoyos. Platillo que data de la época prehispánica y que podemos combinar con numerosos ingredientes. Los tacloyos son como “arepas rellenas”. Lo típico es rellenarlas de frijoles, papas, requesón.. Tlacoyos de frijoles con guacamole. Ingredientes: 🥕250g de harina de maíz precocida. 🥕350 ml de agua tibia. 🥕1/2 cucharadita de sal. Relleno: 🥕1/2 bote de alubias pintas. 🥕1/3 de cebolla blanca. 🥕3 cucharadas de salsa de tomate. 🥕Queso blanco ( opcional ) Preparación: 🍽Mezclamos la harina, agua y sal hasta tener una masa moldeable y que no se quiebra. 🍽Picamos la cebolla, la pocha nos y añadimos las judías y el tomate y dejamos cocinar unos 7-8 minutos. 🍽Aplastamos la mezcla hasta dejar casi una pasta de judias y condimentamos con sal y picante ( cayena ) al gusto. 🍽Hacemos una bola con la masa del tamaño de nuestra Palma de la mano y vamos aplastando y abriendo hasta tener una torta fina. 🍽Ponemos 1/2 cucharada extendida de nuestros frijoles en un lado y cerramos con el otro y vamos con las manos dándoles forme suavemente hasta tener una masa alargada y compacta. 🍽Los ponemos en la sartén a fuego medio hasta que se vaya dorando por ambos lados y listo! 🍽Servimos con guacamole, más frijoles y jalapeños si gustas 😊. 🧤Yo añadí al relleno de algunos tlacoyos queso blanco a los frijoles. 🧤Se puede rellenar también con nopales, papa o españolizándolos con pisto 😆. 🧤Suelen hacerse un poco más finos que los míos, depende de tu destreza con la masa y las manos. A mí así gorditos me gustan más 😬. 🧤Son típicos con harina de maíz azul (pero aquí en España cuesta un poco más encontrarla ). A mí me encantan, es ideal para compartir con amigos y disponer diferentes toppings y salsas en la mesa y sorprender con un plato diferente. Os ha gustado la receta? You want easy, I give you easy.... 💁‍♀️ Asparagus, Brie and Onion puff pastry parcels 😋 Ingredients: 3 puff pastry sheets 3 bunches asparagus 1 block Brie 3 brown onions Olive oil Salt and pepper Sesame seeds 1 egg Season asparagus and onion and fry until soft Slice Brie Cut each sheet of puff pastry into quarters Place asparagus, Brie and onion onto each quarter of puff pastry. Fold over and pinch to seal Baste with egg Sprinkle with sesame seeds. Bake at 200°C for approx 15-20 mins or until golden brown. Serve with chutney (optional ) Recipe adapted from @taste_team

Happy Friday 🥳 I just realised I didn’t post today and it’s a bit late by now but oh well, thought I’d check in 😊 today has been super busy and I’ve had a couple of very long meetings so haven’t had much time to get out of my office chair 🙈 but I’ve now logged off for a long weekend with Monday booked off 🙌 This pie and mash with garlicky greens and lots of gravy was perfect for this cold spell 🥧 we had it for dinner last night.
