#weighinwednesday Down 1.8lbs this week! This past week I realized that this living nightmare was not going to go anywhere soon. I needed to make a decision to continue on the destructive path I was heading on (not working out, stress eating, etc. ) or to stop putting on all my focus on things I cannot control and redirect that focus to myself and the things I can control. I chose me. Instead of working through my lunches and breaks this week, I made it a priority to step away from my office. Not just for my insanity, but for my health too. This week I chose to put myself first again and man what a game changer! I still find myself feeling overwhelmed more often than not, but trying to take it slow and do the best I can. We all are just human afterall😉 If this past week or month hasn't been so great for you either, that's ok, start again. #dinner Ranch Beef Tips and Cauliflower/Potato Mash. Slow cooker meal! Inspired by @healthylittlepeach _________ Ingredients: •Beef Tips - I had 2.25 lbs 2 cups Beef broth 1 Ranch Packet 1 small onion Salt & Pepper to taste 2 tbsp corn starch •Cauliflower/Potato mash 16oz frozen cauliflower 16 oz baby potatoes 1/4c-1/2c milk Salt & Pepper _________ Directions: In a slow cooker add all the beef tip ingredients - beef, stock, onion and ranch packet. Slow cook on high for 4 hrs When completed, mix corn starch in a little water and add to the crock pot to create a thicker gravy 🤤 Mash: cut up potatoes, place in a pot and bring to a boil. Boil 5 mins, add frozen cauliflower and continue to boil for 5-7 mins until potatoes are cooked. Mash with milk to your liking. Leftovers taste better then original? 🤔 not always but sometimes! Especially if it was so good the first time u had it, when u have it again it’s that 🤤🤤🤤 feeling all over again! Having an early lunch cause breakfast was just a bar cause over slept 😂🙈 yup being quarantined got me feeling lazy! Going to sleep late, sleeping late, when this is all over and done with, it’ll def be a rude awakening to be up at 4am or 5am 😂😂😂😂 . . Ok back to the meal! So yesterday I made potatoes in a chip form (absolutely delicious ) so I based my meal around them. I knew I wanted to finish them today, but I also had some left over cauliflower and asparagus from yesterday! So why not! Half the plate was pretty much set up! Next I figured I needed some protein so I used @amylufoods chicken sausage and I sautéed it on a pan for about 5 min (110 calories and 13g of protein ). Since we are in pandemic def eating some peppers for vitamin C, and sautéed some fresh organic baby spinach. And the meal was ready under 5 min lol delicious and fast ... win win

At nearly 300lbs... it’s not as simple as “just eating right and exercising”😅 ✨I’d run out of breath in no time, and feeling all 300lbs come down from a burpee was a nightmare. Between my chest and stomach both being so large, sit ups were nearly impossible. Don’t even get me started on how it felt having my only gym clothes options be oversized tshirts, leggings that constantly roll down, and sports bra that couldn’t hold me up if I paid it to. ✨Fast forward to now - I’m over 100lbs lighter, still not in LOVEEEE with the gym but I’m going, and still struggling from back and shoulder pains from an unsupportive sports bra. But that ends now. Y’all... I kid you not my eyes swelled up with tears when I put this bra on. Ask my momma🤷🏼‍♀️ ✨I literally said “finally”. FINALLY I had a bra that covered all sides, FINALLY I could do a jumping jack and not readjust after every other one.
