QUARANTINE CHECK IN: . With everything that has been going on and with most of us (hopefully ) being home more than usual, a lot of us are leaning heavily on pantry/freezer food friendly meals to sustain us during this quarantine and eliminate frequent trips to the grocery store. . This has been a very different experience for me bc I’m known for an empty pantry. On a good day, I might have rice, maybe some canned beans & a package of cookies lol Bc I cook fresh & grocery shop weekly, I rarely have more than what I need for that particular week. All of a sudden, I have things like easy Mac in my pantry, which I haven’t eaten since college. I lowkey forgot how good it was! Lol This has made me realize how far I’ve come in the way I eat. Half of these foods, I’d just forgotten about bc I never eat them anymore. Being able to enjoy some of them again has been nostalgic & comforting. . I’ve def been unapologetically enjoying my fair share of #quarantinesnacks . But I’ve also been continuing with my daily #greensmoothie breakfast, trying to have a veggie with every meal (even if the main course is frozen pizza or ramen 👀🤣 ) & staying on top of my workouts to try to find some type of balance & not forfeit all my progress. This week for lunch, I made chicken salad using canned chicken from my pantry. I made this to show that not everything that comes from the pantry or freezer has to be junk or unhealthy. I paired it with club crackers & an orange, bc #vitaminc 🍊 . I gotta say, I haven’t touched my meal prep containers in what seems like weeks. 😩 It’s been really interesting not being in my #mealprep routine cuz it’s all I know. On the other hand, it has been kind of nice to have the option of eating something different everyday or still cooking my healthy meal preps like normal, but not portioning it out into containers. I’ve been enjoying this simplicity. It’s a huge change from my elaborate meal preps. . How has this #quarantine & #covıd19 situation changed your eating/meal prep routine? Who makes their own protein drinks? 🙋🏻‍♀️• • I have to say there are a lot more options out there for flavors than there used to be but it’s still fun to make your own concoctions. • • Some tips 👇🏼• - Add unsweetened cocoa powder to make flavors more “chocolately.” • - Use Peanut Butter powder to add flavor without a lot of extra calories. - Serve cold 🥶 • • Here are some recent flavors I mixed together. All protein powders are low carb 👇🏼• • Cinnamon Almond: 1 cup milk of choice + 1 scoop vanilla protein powder + 1 tsp cinnamon + 1 tsp almond extract + 1 cup ice• • Chunky Monkey: 1 cup milk of choice + 2 tbsp pb2 + 1/4 frozen banana + 2 tbsp cocoa powder + scoop chocolate protein powder + ice as needed. I also added a few stevia chocolate chips on top.• • Samosa Cookie: 1 cup milk of choice + 1/4 cup shredded coconut + 1 tsp caramel extract + 2-4 tbsp of cocoa powder + 1 cup ice• • Blueberry Cardamom: 1 cup milk of choice + scoop vanilla protein powder + 1/2 cup frozen blueberries + 1/2 tsp cardamom• • Blend all ingredients in blender. Which is your favorite? 1,2,3, or 4 🤩🤷‍♀️😍 📷: @choosing_balance 👌 Check out @organicallyca for daily recipes 🍏 ---- Meal 1 👉 Leftover blackened shrimp thawed and then reheated in the cast iron skillet for 5 mins over medium heat in olive oil + 1/2 avocado + tomatoes + zucchini sautéed along with the shrimp + a little lime squeezed on top 💯 . Meal 2 👉 1 piece of salmon with a sprinkle of garlic powder, pepper, salt, and lemon squeezed on it cooked over medium heat for 3 mins on each side (get the pan hot first and add olive oil ) + sautéed zoodles cooked for 3-4 mins over low medium heat in olive oil + 1/2 avocado. . Meal 3 👉 Boil a pot of water, when it’s boiling add eggs in for 7 mins then put them in cold water. Topped here with red pepper flakes. Then a sweet potato sliced into fries and broiled on the bottom shelf of the oven for 10-12 mins depending on how you like them. Paired with sliced avocado and tomatoes. . ESSENSPLAN 📑 Zur Zeit hat wohl jeder auf irgendeine Art und Weise mit den Auswirkungen der Corona Pandemie zu tun. 🤯 Hier bei uns sieht es so aus, dass die Kinder zuhause sind und ich und mein Mann im Wechsel auf Arbeit sind. Ich bin normal im Büro, allerdings ohne direkten Kundenkontakt - nur per Telefon oder Mail. ☎️💻 So oder so erfordert es besonders jetzt einer guten Organisation - und da ich seit jeher ein Listen-Liebhaber bin, mache ich mir natürlich auch für den Essensplan der ganzen Familie eine Liste 👩‍💼📑 Hier ist der Plan für das Mittagessen von dieser Woche. 🍝🍲🥣🥗 Ich koche gerne auch gleich mehr, damit man am nächsten Tag noch davon essen kann - das spart einfach Zeit und Nerven 👍🏼 Mir ist es wichtig, vollwertig für meine Kinder zu kochen, möglichst viel Gemüse mit rein zu packen 🥗 und für mich natürlich kalorienarm ➖ Wenn es dann mittags doch mal etwas Kalorienreiches gibt (wie diese Woche die Lasagne - das haben sich meine Männer gewünscht ), dann fällt eben das Abendbrot oder Frühstück schlanker aus ⚖️ 💡 Und ein weiterer Vorteil der Essensplanung: Man weiß genau, was man einkaufen muss, und kann alles in einem Wocheneinkauf erledigen und muss nicht so oft zum Einkaufen raus. #stayhome Vielleicht ist ja eine Anregung für euch dabei.. I missed cheese too. A lot of the store bought options don’t seem to stack up, but honestly, after awhile I just stopped craving dairy cheese. Part of the reason is that I discovered how to make my own ‘cheese’ alternatives, like these amazing vegan cheese curds which I serve over poutine. You could also use this cheese on pizza or even a pasta dish. . 👏Simply blend all the ingredients listed until completely smooth. Pour contents into a large pan over medium heat, and stir continuously. It will become thick and stretchy. Set aside, let cool, then place in the fridge for 1-2 hours. HAPPY TUESDAY!! 😊 i have online class this AM at 9:30 so i started off my day early with a killer @madeline_moves upper body workout - definitely miss the gym but her workouts are really at home friendly which is great 🙌🏻 now i’m refueling with some oatmeal for a quick breakfast and then classes for the rest of the morning! hope everyone is staying busy, its finally sunny today so i’m lookin forward to going on a walk later 😊⁣ ⁣ ☆ OATMEAL DETAILS! -> 1 packet unsweetened @traderjoes oatmeal mixed with water then microwaved for 1-2 minutes, then added 1/2 serving vegan peanut butter cookie @bowmar_nutrition protein - add more water then microwave for 1-2 minutes, then i added 5 tbsp liquid egg whites (makes it super thick & added protein! 💪🏻 ) microwaved again then stir and repeat until combined, finally topped it off with berries & cinnamon crunch almond butter @bowmar_nutrition 💯 ☆

Not only are these Meal Prep Honey Chipotle Chicken Bowls a great way to spice up traditional chicken and rice, they are also easy to customize! You can use whatever fresh veggies you may have in the fridge or add in pantry staples likes black beans or chickpeas to make them even heartier. I made this for lunch today & it was an easy throw together meal. even put the spaghetti squash to cook in the oven while I did a home workout, so knocked it both out at the same time😏this was a good way to use up the spaghetti squash that was sitting around on the counter plus the chickpeas in the pantry. shared more in my stories how I threw it together but super simple! hope you’re having a great monday💛💛 . cooked the spaghetti squash (microwave for 2 minutes & then cut in half. bake at 400 for 40 minutes or so ). In pan, add a little olive oil + drained chickpeas on medium heat. add in tomato basil marinara + spices (I used sea salt, pepper, garlic powder, thyme, oregano & red pepper flakes ) + add in big handful of spinach to wilt. top it on cooked spaghetti squash!

FRIES AND FALAFEL?🤔 definitely my kinda fast food🙌🏼🌱 . My whole family is plant based, which means we go through a looot of canned beans each week. And since we’re trying to limit grocery shopping to one trip a week + can only buy 2 tins each shop, the solution = cooking our beans from scratch🤗 . It’s also a lot cheaper, and produces less waste so definitely a win-win situation (just a little more effort, but make big batches and freeze them to save time☝🏼 ). . Out of the massive batch of chickpeas I made these falafel, creamy homemade hummus + a few other things!💛 . HUMMUS RECIPE: 1 cup cooked chickpeas 2 tbsp tahini Juice of half a lemon 2 cloves of garlic 1 tsp ground cumin 1/2 tsp ground coriander 1 tsp salt . . 1️⃣Add all ingredients to a blender or food processor and blend until super smooth, with as much cold water as needed to get it really creamy + your desired thickness! 2️⃣Season with salt and pepper. 3️⃣That’s it! ENJOY😋

Checkout the link in our bio for more healthy recipes!⠀ .⠀ Tag a friend who would love this ⠀ .⠀ {NEW} Salsa Verde Chicken Skillet from @cleanfoodcrush 🔥⠀ ⠀ An EASY, satisfying chicken recipe to help you enjoy your weekend!🤗 I'm thinking a side of brown rice + a big scoop of guacamole & lets just call it a day!🥑 4 servings⠀ ⠀ Ingredients:⠀ 4 medium chicken breasts⠀ 1 (15 ounce ) jar salsa verde, or 2 cups homemade salsa verde⠀ 1/2 cup shredded Tex-Mex cheese blend⠀ 1/2 cup chicken bone broth⠀ 1/2 tsp garlic powder⠀ 1/2 tsp chili powder⠀ 1 Tbsp olive or avocado oil⠀ sea salt and freshly ground black pepper, to taste⠀ fresh cilantro, chopped to taste⠀ fresh lime slices, to garnish⠀ ⠀ optional: thinly sliced scallions or greenonions, to garnish⠀ ⠀ Instructions:⠀ ⠀ Preheat your oven to 400 degrees f.⠀ ⠀ Sprinkle the chicken breasts with garlic powder, chili powder, sea salt and pepper, then rub it into the chicken, on all sides.⠀ ⠀ Heat oil in an oven-proof skillet over medium heat.⠀ Carefully place your seasoned chicken cutlets into the hot oil and sear each side until golden brown, about 3 minutes on each side.⠀ Once the chicken is nicely browned, transfer to a plate.⠀ ⠀ Next, pour the broth into your skillet.⠀ ⠀ Add salsa and cook on medium, while scraping any browned bits on the bottom of the pan. Bring to a low simmer.⠀ ⠀ Nestle your chicken back into the bubbling sauce and let it simmer until cooked through and liquid is reduced by at least half.⠀ Carefully spoon your hot bubbling sauce on top of the chicken several times during cooking.⠀ ⠀ Once the sauce is thickened remove from the heat and sprinkle cheese on top.⠀ ⠀ Transfer the skillet into your preheated oven and bake for 5 minutes or just until cheese is nice and melty.⠀ ⠀ Remove from the oven, add garnishes and serve warm. Plate of veggies for lunch today. Baked sweet potato 🍠 with mashed avocado 🥑, chili roasted chickpeas, sautéed gourmet mushrooms 🍄 , tomatoes 🍅 and spinach 🍃. You can find the recipe for the chickpeas with the link in my bio. Between homeschooling the kids and the family all being cooped up in the house as the boredom sets in things have been a bit tense around here today 😳. Get your pantry and freezer ready for social distancing! I am sure many of you already did a massive grocery shopping and have all these ingredients above! SO it’s time to mix them up together! . 🍚Let’s start with spicing up your rice! ◾️Day 1: This is the day you prep your meals for the whole week or for 3-4 days. Cook 1 cup plain rice (with chicken/vegetable broth instead of water! ). Eat plain rice on day 1. ◾️Day 2: Grab one portion plain rice and mix with diced tomatoes reheat in a pan or in microwave. ◾️Day 3: Grab one portion plain rice and mix with canned/cooked chickpeas. ◾️Day 4: Grab the last portion and mix with frozen veggies. . 💡TIP: Reheating rice in microwave and placing damp paper towel on top will make the rice moist! . 🙏🏻Hope you try this out and not get bored of eating the same things everyday! .
