🐣Easter cookies🐣 . These chunky, chocolatey cookies are the perfect pick me up to make over the long weekend! And THEY’RE VEGAN & GLUTEN FREE 🙌🙌🙌 . Ingredients: Wet Mix: - 1/2 cup of coconut oil, solid, not melted (You can also use non dairy “butter if you don’t have coconut oil ) - 1/4 cup of non dairy milk - 2tsp vanilla essence - 1/2 ripe banana Dry Mix: - 1 cup unrefined sugar or coconut palm sugar (or whatever sugar you have😊 ) - 2 1/4 cups of plain gluten free flour - 1tsp baking soda - 1tsp baking powder - 2 cups of dark chocolate chips or chunks (or use Easter egg 🍫 ) . Method: - Pre heat the oven to 180 degrees & line a large baking sheet. - Mix all of the ‘wet’ ingredients together in a food processor (or mix very well to form a creamy paste by hand whisk ) - Then mix the dry ingredients (apart from the chocolate ) together well & then add to the wet mixture & blend together until it forms a dough. - Gently fold in the chocolate chips & then pop the mixture into the freezer for 15 minutes so that the cookie mixture will be firmer & keep their shape better when cooked. - Remove the mixture from the freezer and roll into golf ball sized rounds, and place an inch apart on your baking sheet. - Once all the cookies are rolled out pop into the middle of your oven & bake for 10-12 minutes (or until golden ). - Allow to cool & ENJOY 🙌 . Top Tips👇 - If you don’t need these to be vegan & gluten free you can sub the coconut oil for butter, sub the non dairy milk for whatever milk you have and you can use regular plain flour & they will still be AMAZING 🤩 . - If you have GF oats but no flour, blitz the same amount of oats ( 2 1/4 cups ) in a food processor or blender to create oat flour which will work perfectly too. . Have you ever tried Konnyaku (aka konjac )? Konnyaku is my go-to food when I want to lose weight and after eating naughty foods… why? 😱⁠ ⁠ Because konnyau is extremely low in calories and actually expands in your stomach- so it helps me to feel fuller for longer and has great detox effects! 😍⁠ ⁠ Noodle shaped konnyaku is called “miracle noodle” in USA and “slim” pasta in Australia. It is also great for detoxing. It absorbs toxins from your gut and is great for bowel movement because it is high in fibre- what an amazing detox weapon!! 💪⁠ ⁠ But most importantly- it is a super high alkalising food. When we eat naughty foods or get stressed, our body produces higher volumes of acid and nasties like viruses, cancerous cells, and inflammation thrive in this environment. ⁠😖⁠ ⁠ Konnyaku has a rubbly texture, which can be challenging to eat if you are new to it. I love cooking with tofu and this is a recipe that I’ve been pretty obsessed with over the last few weeks! Be sure to save this post if you want to try it out for yourself ⬇️ Miso tofu with mushrooms . By @earthofmariaa . 1 block firm tofu, cubed, with excess water pressed out 1 medium onion, chopped 1 clove garlic, minced 1 cup mushrooms, chopped 2 tbsp tamari 1 tbsp rice vinegar 1 tsp miso paste 1 tbsp tomato paste 2 tbsp water 1 tsp cornstarch Preheat the oven to 200 degrees C/400 F. Arrange the tofu cubes on a sheet of parchment paper and bake in the preheated oven for 10 minutes, to brown them slightly. Meanwhile, add the onion and garlic to a non-stick frying pan. Sauté for 2-3 minuets, until fragrant, and add the mushrooms. Sauté for a further 4 minutes or so to allow them to cook down. Make the sauce by whisking together the tamari, rice vinegar, miso paste, water and cornstarch. Add to the frying pan together with the baked tofu cubes, stirring for 2-3 minutes to allow the sauce to thicken. Monday calls for mac n’ cheese! 🧀 One of my go-to meals when I want something quick, comforting, and carby, which is pretty much 24/7 these days 😌. I love this sauce because it’s super versatile — try it on noodles, zoodles, chicken, veggies... even pizza! — and can be easily frozen for those times when creamy pasta cravings call. Tonight we served it with spicy garlic shrimp + grilled spring asparagus. Sending hugs to all. Hope you had a great Monday! ❤️ - #whatsonmyplate : SHELLS WITH CREAMY GARLIC GOAT CHEESE SAUCE: in a blender, combine 1/2 cup @kitehillfoods regular cream cheese (can sub kite hill chive cream cheese or regular cream cheese ) + 1/4 cup goat cheese crumbles • 1/4 cup almond milk + 1/2 teaspoon garlic powder + salt & pepper to taste; blend until smooth ). Toss with @eatbanza chickpea shells (or pasta of choice ) •• SPICY GARLIC SHRIMP: season shrimp with @primalpalate jerk seasoning + paprika, then sauté in garlic ghee until pink and slightly brown ) •• GRILLED ASPARAGUS W/PARMESAN.

Super Easy Peanut Butter and “Jelly” Cups - vegan, gf, keto-friendly (wooo! ), 103 cal, the most satisfying almost-no-sugar dessert EVER 👌 . . . . You think YOU’RE baking and cooking too much? I’m turning into Willy F*cking Wonka man 😅😂🤤 I saw something like this on @danishealthyeats feed on Friday. Never tried making one but she made it sound so easy 👍 So I tried my hand at them and made them even easier. 3-ingredients, all you need is some muffin liners and a microwave and a freezer, ya welcome. . . . This also happens to be my first-ever-Keto-friendly recipe 😱 I actually made mine with @lilys_sweets no added sugar chocolate (I just think their baking bars are too good and melt like a DREAM - they’re also one of the very few brands that engage with me on insta haha so that kinda gives me added incentive to buy their stuff ) but I gave you the nutrition info with regular sweetened chocolate since that’s easier to come by 🤗. . . . - 2 oz chocolate (4 squares from a baking bar ). - 4 tsp (20 g ) almond/peanut/whatever butter. - 4 raspberries (thawed from frozen is ok ). . . . Get yourself 4 silicone muffin cavities/liners. Melt your chocolate in the microwave (30 sec increments, don’t burn it! ). If not runny enough add little dot (1 tsp ) of coconut oil to thin. Add 1 tsp (5g ) chocolate in each cavity, move the chocolate around tho cover the bottom. Freeze a few min. Mash your raspberries. Add 1 tsp (5 g ) butter and 1 raspberry mash (raspberry mash? ) on each. Pour on 2 tsp (10 g ) chocolate. Freeze again a few min. Pb&j cups are ready for consumption! They made damn good “desserts” is it still dessert if there’s like zero sugar in it? Make emm and keep em frozen!

Ufff una delicia!! Crema de zanahoria y tomate 🥕 🍅 . Creo que han podido notar que soy amante de las cremas, de todos sus colores y sabores y  no les miento, esta ha sido definitivamente una de mis favoritasss🙌🏻🤩 . Si ustedes también son de cremitas como YO déjenme un 👆🏻 para seguirles compartiendo muchas más recetas de cremas, sopas, todo lo que puedan preparar rapidísimo y fácil en sus casas, seguramente los ingredientes ya deben de tenerlos en su nevera! Búscalos y a cocinarrr! #vegan   _______________________ Solo necesitas (para dos cremas ) -5 tomates maduros -2 ajos -1 cebolla -1 zanahoria -cilantro -leche de coco sin azúcar -2 cucharas de miel de agave -sal y pimienta al gusto PREPARACIÓN: . 👉🏻Corta la cebolla en cuadros pequeños y en una sartén agrega ajo y cebolla con un poco de aceite de oliva y deja cocinar hasta que la cebolla este dorada . 👉🏻Por aparte corta la zanahoria y los tomates en cuartos y una vez la cebolla este dorada agregalos a la sarten, agrega los demas ingredientes (menos la leche de coco ) y mezcla muy bien . 👉🏻Deja cocinar a fuego bajo hasta que la zanahoria y los tomates estén suaves y hayan soltado su jugo . 👉🏻Una vez estén suaves los tomates, agrega todo el contenido a una licuadora o a una proceadora hasta que tenga una textura homogénea . 👉🏻Luego agrega a una sartén de nuevo a fuego bajo y ve adicionando la leche de coco, la cantidad depende de tu gusto, no agregues mucha para que la crema no quede demasiado liquida. Mezcla muy bien y deja hervir por unos 5 minutos más . 👉🏻Servir y agrega tus toppings favoritoss! . . A disfrutarrr🧡🧡 . .

Here’s mine listed from high- to low-light order: - Staying up way beyond my comfort zone to Netflix with Gav (and these cookies! ) to watch a 1980s MERMAID MOVIE 🧜‍♀️ with Tom Hanks. - Two really long stroller walks getting to talk without referring to each other as “Mommy” and “Daddy” 😑. - Video calling friends (almost feels Ilke we actually hung out 🤗 ). - Conquered spaghetti squash by turning it into Pad Thai that tastes just like take out 🤤 (should I put this up, my photos looked like 💩 ). - More chalk time on the pavement than I would have liked, still pretty cool though 🙏 . - Gave bath to the elderly kitty who lives with us 🐱 . - Got bit by a toddler, 🧛‍♀️ TWICE, second one left a mark. - Eating ice cream out of the freezer in our basement while said toddler kept screaming at Daddy🍦(that escalated quickly 😅 ). . . Definitely recommend the friend calling thing 🙌 We’re both introverted, so it feels strange to make this effort, but once we do it’s so good, and everybody feels more sane. . . . The cookies are way too good. Kinda glad Gav killed the entire batch before Tom Hanks could consider becoming a MERMAN 😂. If your desire is to sit in front of the TV like a kid with some 🥛 and still feel like you’re doing yourself something good, you are officially COVERED. . . . - 2 tbsp coconut oil melted (30 g ) - 1/4 cup creamy nut/seed butter (64 g ) - 1/4 cup + 2 tbsp maple syrup (126 g ) - 1/2 cup cocoa powder (48 g ) - 1/2 cup flour (60 g ) - 1/4 tsp baking soda . . Filling: - 3 tbsp (vegan ) cream cheese (42 g ) - 3 tbsp powder sugar (21 g ) . . . Makes 24 if I did the math right because we definitely ate some before they were even assembled 😅 Mix oil, nut butter, syrup. whisk together flour, cocoa, baking soda, pinch salt. Combine the two (splash tiny nut milk if you need ), roll out on parchment, cut cookies, repeat until no dough left. Bake 8 mins (always 350F ). cool completely and sandwich with the filling. Enjoy with a glass of milk 🥛

Lunch when I’m craving the rainbow 🌈


⁣i LOVE caesar salads 🤤 i’m very particular about the dressing tho and hate every bottled version i’ve tried! luckily, caesar dressing is super easy to make at home 🏡 ⠀ ⠀ 3 garlic cloves, minced⠀ 1 tsp anchovy paste (this ish looks nasty but is key )⠀ 2 tbs lemon juice⠀ 1 tsp dijon mustard⠀ 1 tsp worcestershire sauce⠀ 1 cup olive oil mayo, plain yogurt, any mayo alternative really⠀ 1/2 cup grated parm⠀ 1/4 teaspoon salt⠀ 1/4 teaspoon freshly ground black pepper⠀ ⠀ first, i blend all of this in a blender! then i add water to get it to my preferred creamy texture (add water until u get the consistency u want ) 🥬 it’s NOT the healthiest ever but it’s delicious and makes me want to eat a whole bowl of kale so i’ll take it 🤩

Salmon Salad 🥗 Leftover salmon paired with lots of veggies topped with some dressing 👌🏻 I love @organicgirl + @primalkitchenfoods dressings a lot but you can also easily make your own with a little olive oil and balsamic vinegar 🙌🏻 I basically just threw any veggies that were starting to look a little ehh in here haha.
