Preparing chestnuts to freeze for future use. I feel so fortunate to live surrounded by old chestnut trees. Not only do they provide chestnuts, but some are also providing the right conditions for mushrooms such as delicious chanterelles. Here chestnuts are often boiled with fennel seeds and doused in red wine before being eaten one by one, or used to make flour. CARROT & CORIANDER SOUP W/ SPICY PAPRIKA CROUTONS A super simple and easy soup to make - carrot and coriander is one of my go-to soups to batch cook on the weekend . I love the crunch of croutons and I like to mix up the flavour of them - today I’ve used smoked paprika but you can also use Zaatar or ras-el-hanout to keep it fresh and exciting! Here’s how you can make it - perfect for work from home lunches: . Ingredients: . 2 wholemeal pitta bread 3 tbsp olive oil 1 tbsp smoked paprika 1 white onion, chopped 1 tsp ground coriander 1/2 tsp ground cumin 1/2 tsp ground turmeric 500g carrots, peeled and chopped 1 large potato, peeled and chopped 1 litre vegetable stock Small bunch coriander, chopped . Method: . 1️⃣ First the croutons! Heat the oven to 200C/fan 180C/gas 6. 2️⃣ Cut the pitta breads into bite-sized pieces then toss in 2 tbsp olive oil, smoked paprika and salt and pepper. 3️⃣ Spread on a non-stick baking tray and bake for 10-15 minutes or until crisp and golden. 4️⃣ Heat 1 tbsp oil in a pan then fry the onion with a big pinch of salt for 5 minutes or until softened. 5️⃣ Add the spices and cook for a minute then stir in the carrots and potatoes. Pour in the stock, bring to a simmer and cook for 25-30 minutes or until the veg is tender. 6️⃣ Pour into a good processor (or you can use a stick blender ) and blitz until smooth, then stir in most of the coriander and season. 7️⃣ Serve topped with the croutons and an extra sprinkle of coriander, if you like. #kesarskitchen 👩🏽‍🍳

Trying to bring more autumn vibes with these Sweet Potato Waffles. 🧇 Happy Sunday loves! 🧡 Grab the recipe right here. Makes 6 waffles 1 and 2/3 of cups organic all purpose flour 2 tbsp of yellow corn meal 2 tbsp of coconut sugar or brown sugar 1 tsp of flax meal 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 2 tsp cinnamon 1 medium cooked sweet potato mashed and mixed with 2 tbsp of apple sauce 1 1/3 cups of soy or almond milk 1 tsp pure vanilla extract 1/3 cup melted coconut oil or vegan butter. Method. Heat your waffle griddle. Combine dry ingredients with wet ingredients. Don’t over mix the batter. Pour couple of spoonfuls of batter inside the waffle maker. Cook for few min until waffles are crispy on both side. Repeat with the rest of the batter. if you started calling me a savory queen now, I wouldn’t be mad because this apple almond salmon bowl is a solid 10/10‼️🤭 like seriously go to your kitchen right now and whip this baby up🥣 Ingredients 1 cup of kale 1 salmon filet 1/4 of an apple 1 tbsp goat cheese 1 tbsp almonds 1 tbsp pomegranate Instructions 1. Coat your salmon filet with olive oil, salt, and pepper and bake for 20 minutes at 425F. 2. Cook the kale on the stovetop on medium heat until it becomes slightly crispy (around 5 min ). 3.
