SCOTCHEROOS.....One of easiest, quickest, yummiest treats to make🙌🏼 This is one of our favorite treats and a crowd pleaser! . Ingredients 6 cups Rice Krispy cereal 1 cup Karo syrup 1 cup sugar 1 cup peanut butter Topping 6 oz of milk chocolate chips 6 oz of butterscotch chips Measure 6 cups Rice Krispy Cereal into a large bowl, set aside. . In a microwave bowl, mix Karo syrup and sugar. Microwave on high for 2 minutes. Add peanut butter and microwave another 30 seconds, stir and pour over cereal. . Spray a 9x13 pan with Pam spray. Pour Krispies in pan and spread flat. . In a microwave bowl, add chocolate chips and butterscotch chips. Melt in microwave on high 1 1/2 minutes. Stir and pour over Rice Krispies. COMFORT FOOD // We normally try to eat pretty healthy over here, but sometimes you just need a good ol’ southern casserole to make you feel better. King Ranch Casserole is a staple in Texas where I’m from, where you’re sure to find it at every potluck. We love it because it’s cheesy & spicy, and this easy-to-make dish will feed us for 3-4 nights! Here’s my personal recipe: 1.5 lb chicken breast 2 large onions 2 cans @roteltomatoes in green chiles 1 can @campbells cream of chicken soup 1 can @campbells cream of mushroom soup 16-20 corn tortillas 2 cups shredded cheese Preheat oven to 325. Cook chicken in large saucepan on medium-high heat. Once cooked through, use a fork to shred. Chop onions, add to pan with chicken, and cook for a few minutes until soft & translucent. Remove from heat. Add Rotel (drained slightly ), cream of chicken, & cream of mushroom and stir until combined. Now, you will layer in a large casserole dish - similar to a lasagna. Start with a very thin layer of the sauce mixture at the bottom of the pan to keep from sticking. Next, layer 4-6 tortillas until the entire surface is covered. After, a more generous layer (about 1/4 of the total ) of your sauce mixture. Then, sprinkle a thin layer of cheese on top. Repeat 3x more: tortillas, sauce, cheese....etc. until you have filled the casserole dish and run out of sauce. Top with a generous layer of cheese & bake at 325 for 40 minutes until bubbling. For the final touch, turn on the broiler to get a crispy brown top. I recommend letting it cool for about 15 minutes to solidify slightly, then you should be able to slice & serve in squares. While definitely a treat 😉 this dish is a crowd pleaser & can be frozen and reheated for easy food prep. Want to give it a try? This is a crispy fried snacks dish made from whole wheat flour. These go really well with a cup of tea may it be in the morning or in the evening. We can carry them for long distance journey as they stay fresh for a month. This is a healthy option as we have used whole wheat flour here. Here we have used dried fenugreek leaves, another alternative can be to use spinach purée instead. It tastes equally delicious. Children love this snack & it is a good option when hunger pangs. This snack is a treat in monsoons. As I've used ingredients which are easily available in the kitchen, this can be made in this lockdown period when we have limited resources. Here's the recipe: -Whole wheat flour 1 cup -Water 1/3 cup -Salt to taste -Red chilli powder 1-1.5 tsp -Sesame seeds 1/4 tsp -Carrom seeds crushed 1/2 tsp -Roasted cumin powder 1/2 tsp -Oil 1 tbsp -Fresh cream or Malai 2 tbsp -Dried fenugreek leaves 2 tsp -Turmeric powder 1/2 tsp -Oil for deep frying. Heat oil in a pan for deep frying. Meanwhile in a large bowl, take whole wheat flour & add salt, chilli powder, sesame seeds, carrom seeds, cumin powder, oil , malai, turmeric powder & dried fenugreek leaves. Mix everything well. Now add water & knead the dough. Keep it aside for 20 minutes to rest. Now divide the dough into 2 equal parts. Gently press each part & roll into thin big puri. Prick this with the help of a fork or knife.'cut into squares or desired shape with the help of a knife. When the oil is sufficiently hot, put these squares into it for frying on medium flame, flipping sides so that both the sides are fried. Fry till golden colour is achieved. I wouldn’t have made this had @afsana ’s post not reminded me. It was one of my favourite “dad meals” when mom was catering late. Eggs in sauce. Start with a simple tomato sauce, with either or both onion and garlic. A can of crushed tomatoes and a handful of basil (Dad used parsley ). Cook it down for a few minutes, crack some eggs and top with parm or Pec Ro. I made focaccia last night so naturally, I dip. Lamb cutlets kept simple. If you find fresh beautiful cutlets just add salt and pepper. Preheat the oven to 200c. In an oven tray add some olive oil, some baby potatoes and 3 or 4 peeled garlic cloves. Place in the oven for about 20 minutes. Meanwhile on a skillet over very high heat sear the cutlets briefly on each side. Set aside and add salt. Take the potato tray out of the oven. Place the cutlets among the potatoes and garlic. Onion bagels! Bagels are my favorite type of bread (aside from soft pretzels ) and I was finally able to get my hands on some bread flour so I figured I’d whip up a batch! These Hasselback Chicken Breasts recipe is perfect for a weekend dinner! 😄 ❤️ ⠀ ⠀ Ingredients:⠀ Spinach filling:⠀ 8 oz cream cheese softened⠀ 1/3 cup Mozzarella cheese⠀ 1/3 cup Parmesan cheese⠀ 3 cloves garlic minced⠀ 5 ounces frozen spinach chopped, thawed⠀ salt to taste⠀ ⠀ Hasselback Chicken⠀ 4 chicken breasts⠀ 6 strips bacon cooked, drained⠀ ⠀ Step by Step:⠀ 1. Preheat oven to 375 F.⠀ 2. Combine all ingredients for spinach filling and season with salt to taste.⠀ 3. Make 6 slits on the chicken breast, make sure not to cut through. ⠀ 4. Place chicken breast on a casserole. Use half of the spinach filling to fill the clits. ⠀ 5. Place sliced bacon in the slits or on top of the chicken.⠀ 6. Perfect recipe for Easter 🐰🐇 Egg boats with tuna salad One can of tuna 6 eggs 2 small celery sticks or 1 big one Mayonnaise Salt and pepper Green onion Boil 6 eggs, cut in half and remove egg yolks in a separate bowl. Add tuna to the egg yolks. I always drain the tuna before adding it. Very finely chop up the 2 celery sticks. It has to be small pieces. Add the tuna and elk yolk mixture. Add mayonnaise, salt and pepper. I used about 2.5 tablespoons of mayo. Mix everything together and fill in the egg whites with the tuna mixture. Nachos are on repeat while we have access to an oven!! Currently in AZ hanging out in the sun at a family members house and you best believe I’m taking FULL ADVANTAGE of the kitchen situation. Oven, counter space, unlimited electricity to power my blender...yes I’m one happy girl over here 🙋‍♀️ NACHOS RECIPE X2 ➕ Baked Chicken Verde Nachos (GF, SF ) 3 chicken tenders or 1 chicken breast 1.5 C salsa verde (or enough to almost cover the chicken in a pot ) 1/2 can refried beans 1/2 can black beans Cheese of your liking (I would stick with a cheddar or Mexican blend ) Tortilla chips Sprinkle of cumin powder Sprinkle of cayenne powder (optional - adds a little heat ) 1 small pot with lid 1 cast iron skillet / glass pan / cookie sheet ➕ Directions: Preheat oven to 350*. Place chicken and salsa verde in a small pot, cover and bring to a light boil for 12-14mins ( @rachaelsgoodeats has a great blog post about this if you fancy taking a look ). Once done, cover the bottom of your skillet / pan / sheet with refried beans. Then layer with the chicken verde, chips, cheese, black beans. Place in oven for roughly 10 mins or until cheese is melted and beans are hot. Take out, top with cumin, cayenne and whatever toppings you like (*see my fav toppings list below! ) ✖️ Baked Sweet Potato Nachos (DF, GF, SF ) 1 medium sweet potato 1 TBSP olive oil 1/2 can refried beans 1/2 can black beans 1/2 C diced onion (I used red ) 1-2 tsp minced garlic Tortilla chips Sprinkle of cumin powder Sprinkle of cayenne powder (optional - does add a little heat ) 1 cast iron skillet / glass pan / cookie sheet ✖️➕ Fav toppings Cilantro Tomato Bell pepper Avocado Lime Salsa verde ✖️ Directions: Preheat oven to 350*. Cut up sweet potato into small cubes and place in your skillet / pan / sheet. Coat in olive oil and place in oven for roughly 25mins or until cubes are tender. Once tender, take out of oven and place refried beans, black beans, spices and garlic into pan with sweet potato. Mix and cover bottom of pan. Layer your tortilla chips and onion on top, place back in oven for 8-10mins until beans are warmed. Take out and add on whatever toppings you like! 🥳 ENJOY and let me know if you make!!

Paneer tikka masala INGREDIENTS 1 )500g paneer/cottage cheese 2 ) 300g curd/yogurt/dahi 3 )4-5tbsp gram flour/besan 4 )1tsp turmeric/haldi powder 5 )1.5tsp kashmiri red chilli powder 6 )2tsp garam masala powder 7 )1tsp roasted cumin/jeera powder 8 )3/4 tsp crushed black pepper powder 9 )1.5 tsp ginger garlic paste 10 )2tsp(or to taste ) salt 11 )6tbsp mustard oil 12 )1 large onions 13 )1 large capsicum 14 )ghee/butter 15 )dried fenugreek leaves/kasuri methi 16 )1tsp black salt Recipe 1 )dry roast 4-5tbsp besan/gram flour on low to medium heat for 3-4 mins in a non stick pan,then take it off heat and put it aside n let it cool 2 ) In a bowl, take curd, add roasted besan, kashmiri red chilli powder, salt, black pepper powder, turmeric, garam masala, cumin/jeera powder,1tsp black salt,ginger garlic paste and kasuri methi/dried fenugreek leaves while crushing it in your hands,mix n whisk well to prepare the marinate. 3 )now cut the paneer into large cubes(roughly 2x2x2cm ) and microwave it for 30 secs to release water from paneer and make space in paneer to absorb the marinate. 4 )now heat mustard oil till it starts smoking and add to the marinate carefully and with help of a spoon,mix carefully. 5 )dice onions into quarters and capsicum into same size and disect each peel of onion. 6 )add the onion,paneer and capsicum into the marinate and with hands,gently mix thoroughly. 7 ) refrigerate this mixture for 3-4hours letting paneer absorb the marinate. Now there are several ways to cook at home without tandoor 1 )heat a pan and pour some ghee on a medium to high flame,let it heat and put individual pieces and keep turning and cooking individual pieces from each side or simply toss in the pan,do this for 4-5 mins or till each side is cooked well and changed color(onions will give indication they're cooked when they're translucent in color. 2 )if you have screwers then you can soak the screwers in water for 10 mins arrange individual pieces like a barbeque and cook it in a pan turning each side or simply do it in an oven at 200℃ and your paneer tikka is ready. Sprinkle some chaat masala and chopped coriander with some squeezed lemon juice n serve alongside green chutney

Vegetable spring roles INGREDIENTS 1 )1/2 medium cabbage 2 )1/2 medium carrot 3 )1/2 medium capsicum 4 )oil(as reqd ) 5 )salt to taste 6 )black pepper to taste 7 )spring role sheets 8 )wheat/plain/white flour 9 )1.5-2 tbsp dark soy sauce(opt ) Recipe 1 )peel onions and carrots,wash all vegetables and now cut onions,carrot and capsicum length wise(juliens ) and also half cabbage finely length wise 2 )heat 2tbsp oil and add onion and saute for 15-20 secs,now add carrot and saute for 30-40secs and then add cabbage.add salt and pepper,toss up everything,cook for 2 mins,add fark soya sauce(opt ), stir n toss for 30 secs and remove from flame and let mixture cool down 3 )now in a bowl,take 4-5 tbsp wheat or plain flour and make a slurry by mixing some water(consistency should be thicker than a cake batter ) 4 ) now, in one corner of the sheets add some of the vegetable mixture Fold this part till half and bring together the adjacent sides enclosing the role(almost like wrapping a gift ) Now add slurry to the unfolded part with a brush or finger and then for fold till the end 5 )make as many roles as you want then deep fry at max heat or air fry or bake after brushing some oil at 200℃ for 15 mins Recipe for spring role sheets 1 )In a bowl take 8-10tbsp white flour/maida and add 1/2tsp salt and 5-6tbsp oil, mix everything together with hands, then add water and kneed a soft dough(let it rest for 2 hours ) 2 )take a small portion and roll out the dough portion as thin as possible(should be translucent or as thin that you should be able to see through it ) Use it or right away or store it in an air tight container after applying some oil on it in a refrigerator upto a week Note 1 ) while cooking veggies,oil should always be hot and has flame on max

Banana Nutella Muffcakes Not quite a muffin, not quite a cupcake. Hence, muffcake. With a delicious double chocolate, hazelnut & banana muffin on bottom and a fluffy Nutella frosting on top. A beautiful, delicious, sexy combination inspired by my sister’s love for banana slices dipped in Nutella. Here’s the recipe! Preheat the oven to 350 degrees. In a bowl, whisk together 3 medium mashed & overripe bananas, 2 whole eggs, 2/3 cup granulated sugar, 1/2 cup hazelnut butter (can sub another nut butter if you don’t have hazelnut ), and 1 tsp vanilla extract. Slowly stir in 1 cup whole wheat flour (can sub all purpose or a 1:1 gf baking flour ), 1/3 cup cocoa/cacao powder, 1/2 tsp baking powder, 1/2 tsp baking soda, and 1/4 tsp salt. stir until all ingredients are combined. Fold in 1/2 cup mini or regular sized chocolate chips. Scoop into a greased or lined muffin tin and bake for 20 minutes. Let cool. Makes 12 muffins! For the frosting, use a handheld mixer to beat together 1/2 cup, or 1 stick, softened butter (can sub a vegan butter ) and 1/4 cup Nutella. Slowly add in 1 1/2 cups confectionary sugar, 2 tbsp heavy cream (can sub coconut cream ), and 1/2 tsp vanilla extract. Frost the muffins, sprinkle with extra mini chocolate chips, and enjoy! You can sub a different gluten free flour for the muffins, just look up the substitution amount!
