Cilantro Lime Chicken and Rice with a Mango Salsa⁣ By @benanapancakes ⁣ ⁣ CHICKEN MARINADE -1.5-2 lbs chicken⁣ -1 cup orange juice -1/2 cup lime juice⁣ -1/3ish cup olive oil⁣ -1 tbsp honey⁣ -3-4 tbsp soy sauce⁣ -zest of 1 lime⁣ -1.5 tsp cumin⁣ -2 tsp minced garlic -1/4 cup loosely chopped cilantro⁣ *add all but 1/3 ish cup to gallon size bag⁣ *throw in chicken (cut to size you’re going to pan fry or grill before you marinade ) *marinade for at least 30 min⁣ ⁣ CILANTRO RICE⁣ *while chicken is marinating get this going! I use the instant pot now because that’s a gem!⁣ -1 cup rice⁣ -1 cup water⁣ *high pressure for 10 min, release pressure and then let it sit for 20 min⁣ -add juice of 1 lime⁣ -1/4 cup finely chopped cilantro⁣ -salt/pepper to taste⁣ MANGO SALSA *while chicken is marinating and rice is still cooking now is the time to prep this⁣ -1 mango⁣ -1/2 red bell pepper⁣ -1/4-1/2 cup chopped cilantro⁣ -1/3ish cup chopped green onions⁣ -1/2 - whole jalapeño (deseed )⁣ -1 juice of lime and maybe then some⁣ -1 tbsp or so of orange juice (I just used a tsp of orange juice concentrate ) -salt to taste *mix mix⁣ *when you finish this, it’s probably been around 30 min or so, grab the chicken and have your hubs do the grilling (use the 1/3 cup marinade you saved as basting sauce ) or heat up a pan to medium heat. Place in pan to sear, and then turn heat down to help chicken stay tender. Swordfish: 2 pounds swordfish cut up and marinated (whisk all ingredients together ): 1 medium onion (grated ), 2 tablespoons tamari soy sauce, 2 tablespoons coconut aminos, 2 tablespoons olive oil, 2 tablespoons Dijon mustard, 1 teaspoon pepper, 1/2 teaspoon salt. So as I get ready for a new semester to start tomorrow, I just wanted to reflect on how my past weekend was. I never fail to learn something new when it comes to going to fitness expos. Which is one of the reasons why I’m always excited to go. The other of course is meeting these awesome athletes who encourage and inspire us to become the best version of ourselves. I got lucky with a moment of @kaigreene time and one of the things I asked him was “how can I inspire someone to physically get up and take action?” Kai said “You can’t inspire someone to get up and take action you can only encourage them to”. That’s something I’ve never heard before and as he explained it made sense to me. I also got a chance to know @vipergq a little more, someone who I’ve been following since I got into fitness. I want to say we chatted for about 20 minutes about multiple topics, but just the fact that I got to know the people I look up to a little bit more made a huge difference to me. Things like asking and learning is what has helped me grow mentally so when I have any opportunities to do so, I take them. After experiencing all that, I think to myself. I want to be someone who has the power to encourage people to reach their goals no matter what obstacles are in the way. I think back to what Kai told me, the best way to do that is be yourself and show them what someone who is hard working and keeps a positive mindset is capable of. So I intend on doing just that.
