Tonight we tried @nadialimcooks @bargainboxnz pulled beef and cornbread. An unusual meal but tasty. It was pulled beef with carrot, onion, kidney beans, tinned tomato’s and Mexican spices, topped with cheese and cornbread mixture then baked in the oven for 25 mins. It was served with slaw and sour cream. Lemon pepper chicken with vegetable bulgar wheat. I put half a head of cauliflower and a carrot in a food processor and then cooked it into the bulgar. Ricotta dumplings. Make the sauce with passata, grated carrot and onion and tbsp sweet chilli. Make the dumplings with 250g of ricotta, breadcrumb, tbsp flour and grated Parmesan. Make into balls and place into the sauce. Top with Parmesan and bake for 15 mins. Great meal for the family. This feast was cauliflower cheese spaghetti. Bacon, cauliflower, spaghetti and peas with a cream, cheese and lemon sauce topped with garlic breadcrumbs and shaved Parmesan. I thought this was delish! The kids ate about half the portion I served for them. Not their favourite dish. Hoisin pork meatballs!!! 😋😋😋 The meatballs were pork mince, breadcrumbs, carrot, courgette and 2 tbsp of hoisin sauce. All blended together and made into meatballs. I placed them in an oven dish and covered them in hoisin sauce. Baked in the oven for 20 mins on 220. Pumpkin and Bacon risotto. Fry onion, carrot and pumpkin. Add butter, risotto rice, sage and thyme, add chicken stock and simmer for 15 mins with lid on. Meanwhile cook bacon. Peanut satay udon noodles with quorn “chicken” pieces. Veg included carrot, onion and sweet corn. A small sprinkle of fried shallots makes the dish! Would you like your kids to eat meat but they won’t touch it? My daughter was like this so I started introducing quorn chicken and mince. The texture is similar but softer and easier to chew. Home made granola 🥰 1/4 cup honey, 2 tbsp butter or coconut oil, 1 tsp of vanilla extract, 1 tsp of cinnamon. Melt together and mix in 2 cups of oats. Bake for 15 mins at 150 degrees. Add 1/2 cup of dried fruit and 1/4 cup of shredded coconut and bake for further 5 mins. Bircher muesli. I tried @jamieoliver chocolate bircher muesli and it was delicious. I grated apple and squeezed orange over it. Then added oats and topped with a raw cacao and banana smoothie.
